Spelt Pancakes
This makes about 12 4 in pancakes
1 1/4 c. spelt ground
2 Tbsp. sugar
2 tsp. baking soda
3/4 tsp. sea salt
1 egg
1 1/3 milk
mix all dry ingredients – add milk , eggs -mix together and pour onto preheated grill cook till bubbly then flip. . * add apples, cinnamon for extra flavor.
Buttermilk Spelt Bread
* this bread recipe uses enzymes from the buttermilk to help digestion
add 4 cups of ground spelt and 1 to 1 1/2 cups of buttermilk in a bowl – mix well cover and let it sit about 6 hours.
After your 6 hours in a different large bowl add 1/4 c. warm water and 1 package of dry yeast. with 2 Tbs. of honey. let it sit until it bubbles. then add 1 tsp. sea salt, 1/2 tsp. baking soda and 1/2 cup of butter (melted and cooled so that it does not kill the yeast). mix wet ingredients then add them to the spelt and buttermilk mix. I kneed this by hand and add extra spelt flour to the dough until it gets into a nice firm dough ball . not too dry , not too sticky. *** you can add an egg to help keep the bread to not be so crumbly
Let the dough rise covered in a cloth. When ready , separate dough into 2 balls and roll them into loaves. place in greased bread pans until they rise again.( I cover them) bake at 350 degrees until brown makes 2 loaves
Spelt Chocolate Chip Cookies
1 cup butter
1 cup lt. brown sugar
2 eggs
1/2 cup white sugar
2 tsp. vanilla
1 1/4 cup spelt flour
1/2 tsp. baking powder
1 tsp. sea salt
3 cups of rolled oats
optional 1 cup of walnuts chopped
1 bag chocolate chips
mix in bowl all dry ingredients. Add the eggs, vanilla, melted butter . mix together then slowly adding the bag of chocolate chips to dough ( add nuts) mix till chips are evenly mixed. make cookie size rolled balls and place on a greased pan. Bake at 350 until ready – makes about 3 1/2 dozen
* note spelt flour can be a bit sticky, I add a touch more flour, if it is and put grease on my hands to make balls
